Vinification
Fully matured grapes were hand-picked in several harvesting rounds by the end of October, de-stemmed and left to cold maceration for 4 days to extract fruit. During fermentation at 25-28°C, which was started with wild yeast from the vineyard (spontaneous fermentation), in stainless steel tanks, fluid must is poured daily onto the solid components to obtain the optimum in colour and extract. After alcoholic and malolactic fermentation, the Cuvée matures for 24 months in oak barrels in the perfect atmosphere provided in the baroque estate cellar.
Recommended drinking temperature: 16-18°C
Anticipated maturity: 2016-2022
Food pairing
Goes very well with moderately spicy meat, mainly veal, beef, duck, wild poultry and lamb in particular.
